Rhubarb simple syrup: bring to a boil 1 cup water, 1 cup sugar and 3 cups chopped rhubarb, then simmer for 20 minutes. Strain and cool.
Strawberry Rhubarb Martini:
2 oz strawberry vodka
1 oz rhubarb syrup
1/2 oz lemon juice
Shake over ice and strain into glass. Garnish with a strawberry.
Rhubarb 75:
1 1/2 oz gin
3/4 oz lemon juice
1 oz rhubarb syrup
Champagne
Shake first 3 ingredients over ice and strain into flute. Top with champagne and garnish with rhubarb slice.
