It's National Fruit Cocktail Day - well, it will be on May 13th, but I wanted to get this recipe for Sparkling Fruit Salad in your hands before Thursday so you can plan to make it and join in the fun, if you'd like.
This one will come together in minutes, and I chose this recipe for the celebration because it's sparkling - hence - celebratory. What's not to love?
You could probably make this recipe with any fruit your heart desires, but I decided to take it easy and use a mix of fresh and canned. It's not like me to take a shortcut, but it's still early in the fruit season in New England, so I figured it wasn't harming anything.
I chopped strawberries, green grapes and mango slices. I also drained a can of pineapple tidbits and a can of mandarin oranges for this salad.
Once I got it mixed, I topped it with a cup of white grape juice and a half a cup of cold seltzer water. I've also seen similar recipes that call for white wine in place of the grape juice, and I wasn't all that adverse to the idea, but my teenage daughter is a fruit hound, and I thought maybe, for her sake, I'd skip the wine. If you have adults in your house, I'd say try the wine!
I moved it into a smaller container and covered it. It went into the fridge for a few hours and I make sure to stir it every now and again. When serving, I'll use a slotted spoon so as not to have Fruit Cocktail Soup. But it's cold, and sweet and delicious and the sparkling water gives it a little fizz, which is fun.
