Souper Tuesday: Rustic Italian Sausage Tortellini Soup


I love soups that throw together in minutes and taste great. This Rustic Italian Sausage Tortellini Soup fits the bill!


Using frozen tortellini and canned tomatoes, you can put this soup together quickly and it makes 6 nice sized servings. It pairs well with crackers or crusty bread and makes a nice lunch or even dinner. Topped with fresh Parmesan cheese, it's pretty to look at too!



There's not a lot of effort to this soup, so a nice short blog post will be enough. Start by dicing up an onion, rough cutting some baby spinach and dig out some frozen or fresh tortellini. You can use cheese or meat tortellini; I used meat tortellini as I am trying to thin what I have in the freezer. The onion gets fried in a little butter and olive oil, then the sausage is crumbled in.


You can use loose ground sausage or remove the sausage links from their casings - either way is good. This soup is good with both sweet or hot sausage; Dave had some homemade loose hot sausage he made not too long ago, so I used that. Cook the sausage until no longer pink then add garlic for a minute or two.


After the garlic begins to brown, chicken broth, water and diced tomatoes go in. I used a diced tomato with oregano and basil added since it is an Italian soup. The soup is brought to a boil and the tortellini gets added and cooked until al dente (firm to the bite.) The heat gets reduced and the final step is for the spinach and seasonings to be added and cooked a few minutes until the spinach is wilted and the ingredients are well blended. You'll want to plate this one right away - no simmering - as your tortellini will turn to mush.

Feel free to add more seasonings, if you'd like - including oregano, basil, or red pepper flakes. The soup can be ladled into bowls, topped with fresh parmesan cheese and served with crackers or crusty bread. It's easy, fast and delicious.
