Souper Tuesday: Creamy Sausage Tortellini Soup

So, I have to begin by apologizing for this post being late. We had this soup Monday night, but technical difficulties prevented me from accessing the recipe app on the website, so I was "down for the count." We did have this soup for supper, recipe compliments of my dear friend, Kelly, and we all agreed it was really delicious. So without further ado - I present to you Creamy Sausage Tortellini Soup!


This was a breeze to put together and tasted like it took me hours to make, but in reality, it took about 30 minutes. Most of the ingredients I had on hand, and when I couldn't locate bulk ground sausage (thank you, yet again, pandemic!) I did a fast substitution of Italian sausage patties, that once are cooked and crumbled, really had no substantial differences.


The meal started out with sautéing the usual carrots and onions, and although there was no celery here, it could have easily been added. Garlic went in as the veggies became soft and then I threw in the sausage and cooked it all until brown and fragrant. A tablespoon of Italian seasoning went into the mix and we were almost ready for the liquids.

At this point, there was a little grease in the pan from the sausage and it was just enough to start the roux to thicken the soup. I added a quarter cup of flour here and cooked it for a minute. It was the perfect base.


In went the chicken stock and tomato paste and the mixture was brought up to a soft boil, thickening as it cooked. When it reached a soft boil, I threw in the frozen tortellini and let it cook about 7 minutes but you can cook until the tortellini are done to your liking.

I added the heavy cream near the end and continued simmering it until I felt the liquid was hot throughout. Then I threw in a few cups of spinach. The original recipe called for kale, but we are not big fans, so I opted for spinach. We liked it a lot and since it only takes a minute or two for the spinach to wilt, it was great.


Once the spinach was soft, I added a little salt and pepper and ladled servings into bowls. Delicious!
